Wheat Berry & Wild Rice Salad

  
INGREDIENTS:
  • 1c wheat berries
  • 1/2c wild rice
  • 1/4c thinly sliced green onions
  • 1 tbsp fresh basil or 1tsp. dried
  • 1/2c coarsely chopped pistachio nuts
  • 1/2 tsp. salt
  • 1/2c dried cranberries
  • 1/4c Italian salad dressing
  • 1 tbsp honey mustard

INSTRUCTIONS:
In medium sauce pan bring 3 cups water to boiling. Add wheat berries, rice and salt. Reduce heat. Cover and simmer 1 hour or until tender. Drain and set aside. In small bowl combine dressing, basil and honey mustard. In medium bowl combine wheat, rice, cranberries and green onion. Toss with dressing mixture. Cover and chill 4-24 hours. Just before serving, stir in nuts.

V-Up Abdominal: Start the V-Up by lying flat on a mat and then raise both your legs and arms together while keeping them as straight as possible. Keep your lower back as straight as possible as well. Lower down to the starting position slowly while exhaling.
