Squash Soup Health Puree

INGREDIENTS:
  • 8c low fat, low sodium chicken stock
  • 6c coarsly chopped, peeled winter squash
  • 1 onion, chunks
  • 3 large cloves, garlic, minced
  • 2 carrots, peeled and cut into chunks
  • 1 red bell pepper, seeded and chopped
  • 2 sweet potatoes, peeled and chopped
  • 2 parsnips, peeled and cut into chunks
  • 2 tsp cinnamon
  • 1/4 tsp allspice

INSTRUCTIONS:
Place chicken stock in large soup kettle and bring to a boil. Reduce heat and add all vegetables, garlic and spices. Simmer until all vegetables are tender, about 30 minutes. Using a hand blender or food processor puree soup. Season with salt and pepper.

Tiptoe Squat Exercise




How To Do It: Stand with feet about hip-distance apart and squat down to place hands on a step (as pictured). Raise up onto your tiptoes and fingertips while lifting the hips up towards the ceiling and straightening the knees as much as you can. Squat back down and repeat, staying on tiptoes the entire time.
